22 Weeks: Papayas

And now, a graphic! This is fraternal twins at 20 weeks.

Baby Center:
"At 11 inches (the length of a spaghetti squash or papayas, according to the bump), and almost 1 pound, your baby is starting to look like a miniature newborn. His lips, eyelids, and eyebrows are becoming more distinct, and he's even developing tiny tooth buds beneath his gums. His eyes have formed, but his irises (the colored part of the eye) still lack pigment. If you could see inside your womb, you'd be able to spot the fine hair (lanugo) that covers his body and the deep wrinkles on his skin, which he'll sport until he adds a padding of fat to fill them in. Inside his belly, his pancreas — essential for the production of some important hormones — is developing steadily."
I had an appointment scheduled for tomorrow, but ended up going in today. The babies heartbeats are strong. Baby A has his head down, his spine follows the curve of the right side of my belly and his feet are under my right ribs. He is stretched out and probably pretty comfortable. Baby B, though, is head-up (his head is next to his brother's feet) and is tightly curled up. They couldn't even find a good profile shot to better explain his position. The babies still have lots of time to move. I am measuring about 7-8 months if I were pregnant with just 1. I feel baby A move a lot and some movements from baby B. Todd likes watching my belly move.

Todd had a big job Saturday. He announced the names at graduation. All of the high school faculty wore their college regalia. I heard from many how much they liked that. They felt distinguished - as they are.

Here is a short video of him at work:

So, I thought I would share a recipe. My friend, Nikki, made this when I visited her in Tennessee about a year ago. It is so good and easy to make. I have changed a couple of details (I serve green beans on the side rather than in the casserole). I hope you want to give it a try.
You will need:
1 lb. Hamburger
1 small onion, diced
1 small can whole kernel corn, drained
1 can refried beans
1 can enchilada sauce
1 envelope mild taco seasoning
6-8 flour tortillas
3-4 cups mild cheddar cheese (or Mexican blend)

1. Saute onions and brown hamburger meat.

2. Place 1 layer of tortillas in baking dish & spread a thin layer of refried beans over the tortillas.
3. Add corn, seasoning packet, and 3/4 can of enchilada sauce to meat.

4. Spread about 1/2 of the meat mixture over tortilla layer and sprinkle with cheese.

5. Add another tortilla, bean, meat (remainder of the meat), cheese layer. Top this layer with another layer of tortillas. Pour the remainder of the enchilada sauce over the tortillas then top with a good amount of cheese.
6. Bake at 350 degrees for 30 minutes.
Put on your plate & enjoy!

I serve with green beans. You can also serve salad, chips, guacamole, etc. I also really like a little sour cream on top of the casserole. This is really a delicious dish. Thank you, Nikki, for the amazing and easy recipe.

The first day of summer has been great. I had the appointment, but also got to run some errands. The tomatoes pictured above came from Mom's garden--I stole them today. Todd mowed the grass and loaded more of my school stuff into the attic. Rollei has gotten 2 new toys recently. This is a short video of his first interaction with one of his new toys. His play mode is hilarious. He puts his chest down, tail up and wagging, and barks over and over! Yeah, this may just be interesting to me and Todd. That's okay.

Until next Monday... Have a great week!

Just so you know, uploading pictures and videos takes Blogger F-O-R-E-V-E-R! Anybody know what's up with that? Are there shortcuts that I don't know about?
